This program introduces students to various aspects of the food industry, with hands-on practice in our working kitchen and cafeteria. Food is prepared and served by our students on a daily basis. Among the skills our students develop are:
  • The preparation of salads, hot and cold entrees, and desserts
  • Portion control
  • Food storage and shelving
  • Mincing, slicing and dicing foods
  • Kitchen safety
  • Service, set-up, break-down and clean-up

Students who progress to an advanced skill level learn how to prepare a Thanksgiving turkey and stuffing, work with fish and shellfish, split and cook chicken, and bake for the holidays. In this phase, they move on to such skills as cooking gourmet and natural foods, greeting customers, and handling food orders.
